Taco Salad

One look at this Taco Salad and my mouth is watering – yum! Can you see the crisp fresh romaine lettuce peeking through all of those toppings? Yep, it was tossed in that JalapeñoCilantro Salad Dressing I posted the other day. That’s what takes this Taco Salad to the next level – tastefully dressed greens. The TVP taco ‘meat’ is also a MUST. Honestly, this seasoned TVP has not stopped making the rounds in my home since I first introduced it to one of my favourite spice blends. People just can’t seem to get enough, and we’re talking real meat eaters here!

Even more to LOVE about this salad!?…all those flavours and not much effort is required to throw things together. If you’re looking to impress, this summer favourite salad is a must try!

For toppings, I added seasoned TVP (textured vegetable protein), avocado, grape + cherry tomatoes, black olives, pickled jalapeño, red onion, and feta cheese *dairy free. I also pan fried a fresh corn tortilla to add some crunch. For this salad, I like to mix everything together once served. To keep things easy to eat, I chop the romaine into about 2cm thick strips. This makes it easy to fit a bunch of flavours onto the fork making for one tasty bite!

If you’re not familiar with TVP, it’s a low maintenance and highly convenient plant protein substitute. You simply add hot water or broth to rehydrate this soy based crumble, and then season + heat up. It absorbs plenty of flavour and can be ready to eat in minutes. On its own, the flavour is slightly sweet. *I order Bob’s Red Mill TVP on Amazon for a decent price.
